Product Description

Castillo is a modern Colombian coffee variety developed by Cenicafé to deliver higher yields, strong disease resistance, and a consistently balanced cup. Adaptable and resilient, it has become a cornerstone of sustainable coffee farming across Colombia.

For this lot, only the ripest cherries were hand-selected and processed at Cofinet’s La Pradera facility. Cherries underwent a 72-hour dry anaerobic fermentation, with lulos and wine yeast added to enhance sweetness, acidity, and aromatic complexity. The lulo contributes bright, tropical acidity, while the wine yeast deepens structure and fruit expression.

After fermentation, the coffee was pulped and honey-processed, then carefully dried on raised beds until reaching optimal moisture levels. The result is a vibrant, layered coffee with tropical intensity and refined sweetness.

Expect notes of ripe lulo, pineapple, lime, caramel, and passionfruit, with bright acidity and a smooth, medium body.
