Product Description Pink Bourbon is one of the most coveted varieties in specialty coffee. A natural hybrid of Red and Yellow Bourbon, it is prized for the striking pink hue of its ripe cherries and a flavour profile that leans sweet, complex, and intensely aromatic. It is challenging to cultivate even in ideal conditions, making each well-executed lot a genuine rarity.

For this lot, only the ripest cherries were hand-selected and processed at Cofinet's La Pradera facility. Cherries underwent a 72-hour dry anaerobic fermentation with smashed roses added to the oxygen-free environment, allowing their floral aromatics to infuse the coffee at the cellular level. After fermentation, the coffee was pulped and honey-processed, then dried on raised beds below 35°C until reaching optimal moisture.

The result is a coffee that is deeply floral without being perfumed, with a refined sweetness and lingering complexity.

Expect notes of Turkish delight, rose water and ripe fig, with a silky body and elegant, tea-like finish.

100g & 200g bag size only.

Prefer it as espresso? We also offer this coffee blended 50/50 with a naturally processed Brazilian from the Cerrado region of Minas Gerais. The Brazil adds body and sweetness, grounding the florals and pulling beautifully through an espresso machine. Expect Turkish delight, ripe fig, dark chocolate and caramel in the cup. Order here.
