This is an exceptional extended fermentation, washed process, single origin micro-lot coffee from Finca El Guavito in Cauca, Colombia. A 100% Castillo micro-lot produced by Manuel Bueno.
The coffee is picked and hand sorted every day by Manuel and his team. The cherries are left to ferment inside ceramic tanks for 50 hours, then pulped and then left to ferment for a further 40 hours inside another ceramic tank. Later, the coffee is gently washed and dried on raised beds for 20 days.
